For the next few posts, we’re going a little off our normal homesteading track and into a no-egg breakfast series.
Because if you’re anything like me… the unexpected egg-ick is real. And no one should be stuck eating nothing but yogurt bowls and oatmeal when it hits.
Sometimes it lasts a day. Sometimes it lasts months. And suddenly the thing that’s supposed to be the easiest breakfast option is the one you absolutely cannot handle.
I know not everyone has the time (or honestly the energy), but I’ve started trying to romanticize my breakfast. I make something I actually want to eat rather than something I need to survive. The kind of breakfast that feels like you went to a café, sat down with your coffee, read your Bible, and had a quiet moment before the day starts. These are the moments I’ve been trying to recreate at home.
Is it every day? Absolutely not.
Is it just me gaslighting myself into believing it’s romantic to not eat breakfast until the baby goes down for a nap at 11?
Possibly.
But we’re not unpacking that today.
And if you’re here, there’s a good chance you’re a mom (or at least feeding other people most of the time).
So here’s your reminder: Breakfast gets to be guilt-free.
The vacuuming? It can be done while the kids are awake or home from school.
The laundry? It will still be there in 20 minutes.
But you know what’s hard to do later?
Sit down. Eat something warm. Enjoy your own company. Think a full thought.
That small 10–15 minute window in the morning?
If you can take it—even once or twice a week—it matters more than you think—and you deserve it.
One thing you’ll notice quickly—a lot of these involve prosciutto.
I don’t know what happened, but lately it feels like it goes with everything.
I actually made a breakfast burrito recently (not included here because it had eggs), but it had prosciutto, goat cheese, egg, and balsamic… and it was incredible. Highly recommend if you’re not in your egg-ick phase.
But for this series, we’re starting simple:
- Toast-based meals (quick wins)
- Then moving into potato dishes (more filling)
- And a few cozy bowl-style options like korma
The best part about all of these?
They’re flexible.
Don’t want cheese? Skip it.
Don’t like pepper? Leave it out.
Want to add something? Do it.
You know your taste better than anyone.
Personally, you’ll notice I start adding cayenne, sriracha, or chili crisp oil to basically everything. I like a little heat. But you can scale that up or down however you want.
These are here to give you a starting point, because there is truly nothing worse than:
waking up, realizing you can’t even smell an egg…
and then having absolutely no idea what to make instead.
Crispy Prosciutto Avocado Toast
Ingredients
Method
- In a small bowl, mash avocado with black pepper. Add in a squeeze of lemon juice if you want to preserve color – but not necessary for flavor.
- Toast the bread until golden
- Crisp prosciutto in a lightly buttered pan over medium heat for about 45-60 seconds per side, until edges are lightly crispy
- Assemble. Spread avocado thick on both slicesAdd prosciuttoDrizzle balsamic (Drizzle honey now, if you want to, to give it a sweet hint)
- Top with goat cheese for a creamy, tangy finish
The rest aren’t full recipe cards—just simple frameworks you can adjust based on what you have.
Bacon + Avocado Toast
- Cook bacon until crispy (or microwave leftover bacon from 3 days ago….)
- Toast bread
- Spread avocado + salt
- Add bacon
Finish with: black pepper + optional honey or tomato
Classic, but for a reason
Leftover Steak + Avocado Toast
- Slice leftover steak thin
- Warm quickly in a pan
- Toast bread + add avocado
- Layer steak on top
Finish with: goat cheese or feta + salt, pepper, optional balsamic
Feels like a splurge, takes 5 minutes
Salami Melt + Avocado
- Toast bread with cheese until melted (provolone or mozzarella are best, but we use what we have)
- Crisp salami in a pan until edges curl
- Add avocado after cooking
Finish with: black pepper + optional honey or hot sauce
Like a grilled cheese, but better
Tomato + Avocado + Balsamic Toast
- Toast bread
- Spread avocado
- Add sliced tomato
- Drizzle olive oil + balsamic
Salt well
Simple, fresh, and balanced
Crispy Potato + Prosciutto Hash (No Egg)
- Dice potatoes small
- Cook until golden + crispy
- Add prosciutto at the end
Optional: garlic, onion, herbs
Mexican-Inspired Potato Bowl
- Crispy potatoes
- Add corn or rice
- Top with avocado + cheese
Season with: cumin, garlic, paprika
Filling + toddler-friendly
No-Egg Breakfast Wrap
- Warm tortilla
- Add potatoes or meat
- Add avocado + cheese
Optional: sauce (korma, chimichurri, hot sauce)
Same flavors, different format
Breakfast Korma Bowl
- Warm korma-style sauce (blend in pinto beans if you want for extra protein)
- Serve over rice or potatoes
Keep it mild
Cozy, creamy, great for prep
Soft Milk Bread Toast + Butter + Honey
- Thick slice of soft bread
- Toast lightly
- Add butter + honey
Simple, but hits every time
Ricotta + Honey Toast
- Toast bread
- Spread ricotta
- Add honey + pinch of salt
Optional: fruit or nuts
Soft, creamy, slightly sweet
Avocado “Butter” Toast + Charcuterie Plate
- Spread avocado like butter on toast
- Salt well
Serve with:
- Salami
- Prosciutto
- Cheese
- Olives
- Fruit your toddler didn’t eat yesterday
- Honestly anything you can slice and put on a plate
Low effort, surprisingly satisfying
More than anything, this is just a reminder that breakfast doesn’t have to be rushed, skipped, or purely practical.
If you can take even 10 minutes to make something you enjoy—to sit down, drink your coffee while it’s still warm, and have a quiet moment to yourself with God—it matters.
The dishes will still be there.
The laundry will still be there.
But that small pocket of time? That one’s yours.
